Harpswell’s Private Chef: Fluffy French toast

The secret to a fluffy French toast is not only the bread choice and custardy batter, but also a pinch of semolina flour to help create a golden crust. Pairing sweet Hawaiian rolls with caramelized bananas and freshly whipped cream, this French toast is so soft and fluffy, you’ll want to make it every Sunday.

Fluffy French toast

French toast ingredients:

  • 8 sweet Hawaiian rolls
  • 4 eggs
  • 1/2 cup heavy cream
  • 2 teaspoons semolina flour
  • 1 teaspoon vanilla
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • Pinch salt
  • 2 tablespoons butter
  • Maple syrup

Caramelized banana ingredients:

  • 1 tablespoon honey
  • 1 banana, sliced in quarters lengthwise 

Whipped cream ingredients:

  • 1/2 cup heavy cream
  • 2 teaspoons honey

Directions:

In a shallow bowl, whisk together the eggs, heavy cream, semolina flour, vanilla, nutmeg, cinnamon and salt until fully combined. Place 4 rolls into the mixture, turning to coat all sides. Let soak for 2-3 minutes per side.

While the rolls are soaking, heat a saute pan or griddle over medium-low heat. Add butter and allow it to melt. Gently transfer each soaked roll to the pan, letting any excess batter drip back into the bowl. Cook for about 40 seconds to 1 minute per side, turning to brown each side evenly. Remove from the pan and set aside. Repeat with the remaining rolls.

While the French toast rests, prepare the caramelized bananas. In the same pan, add another tablespoon of butter if needed, along with the honey. Bring to a gentle simmer, then add the banana slices, cut side down. Cook for 3-5 minutes, until slightly translucent and golden brown. Flip and cook for another 1-2 minutes.

To make the whipped cream, add cold heavy cream and honey to a bowl. Whip until soft peaks form.

Serve the French toast warm, topped with caramelized bananas, a generous dollop of freshly whipped cream and a splash of maple syrup. Enjoy!
