Baked eggs
Ingredients:
- 7 eggs
- 1/4 teaspoon salt
- 1/2 cup water
Directions:
Preheat oven to 300 degrees. In a medium bowl, thoroughly whisk together the eggs and salt. Whisk in the water.
Spray an 8-inch square baking pan with vegetable oil. Pour the egg mixture into the pan and place on a baking sheet. Pour about 1 cup of water onto the baking sheet to create steam in the oven. Carefully transfer the sheet to the oven and bake for 35 minutes.
Remove pan from the sheet and let cool for 5 minutes. Run a knife around the edges of the pan and gently invert the eggs onto a cutting board. Cut eggs into 4-6 equal squares. Place in a container and refrigerate until ready to eat.
